A canvas knife roll hanging on the back of my kitchen door holds 5 knives in individual fabric pockets with a leather tie that wraps around the whole thing. It has turned a drawer full of loose blades into an organized system that also protects the edges. The canvas is heavy and waxed, probably 16-ounce duck cloth, and the interior pockets are lined with a softer cotton that doesn't scratch the steel. Each knife sits in its own slot and the sizes are graduated so the 10-inch chef knife goes on the end and the paring knife goes in the narrow pocket near the tie. I like that the roll hangs flat against the door and takes up no counter or drawer space. Unrolling it to pick a knife makes cooking feel more intentional. At $35 from a leather goods shop, it replaced a magnetic knife strip that kept dropping blades when someone closed the cabinet too hard.
