My grandmother's cast iron skillet is probably 50 years old. It cooks eggs better than any nonstick pan I've ever used because decades of seasoning have built up a surface that nothing sticks to. The weight is substantial, maybe 8 pounds. When you set it on the burner, heat distributes so evenly that you can sear a steak on one side and have vegetables cooking gently on the other. It feels like cooking with something that remembers every meal that came before.
