Sanbeji, also called 3 Cup Chicken, is a well-known dish in Taiwan. Traditionally, this dish is cooked with 3 cups: 1 cup of soy sauce, 1 cup of rice wine, and 1 cup of sesame oil. There are several versions for the origins of sanbeiji. These stories often involve a chef who puts three cups of sauce in a pottery pot and cooks it for a long time. One of the versions is the national hero of the Song Dynasty and the Jiangxi Humanity Tianxiang. Wen Jiabao was captured by the Yuan Dynasty army invaded by Kublai Khan and suffered four years of torture during his imprisonment. It was during this time that a compassionate prison director cooked the dish for him before Wen Tianxiang was executed.
